Sweet Soy Chicken with Side of Peppers & Onions

Meet Judy Walden Scarafile, the former President of the Cape Cod Baseball League, a position she has held for 24 years. Judy has been involved with the League for 42 years, starting as a scorer  in 1970.Although her passion is baseball, Judy is involved in several activities and organizations in the community, including  organizing the Sept 11 Day of Remembrance in Barnstable Village, the annual Veteran’s Day Service at St. Mary’s Church,  assisting with several meal  programs in the community  and serving on the Executive Committee of the Cape Cod Five Foundation. Judy is a Trustee on the Yawkey Foundation and recently joined the Board of the Needy Fund.

Judy has received the  Mercy Otis Warren Cape Cod Woman of the Year.

Judy doesn’t cook much, but when she does, it is something simple and for at least 2 meals for Judy and husband Peter.

Sweet Soy Chicken with Side of Peppers & Onions

Ingredients:
4 Chicken  breasts
Sweet Soy sauce
Light Olive Oil and Vinegar salad dressing ( Ken’s)
1/2 cup water
2 green or red peppers, sliced
2 large vidalia onions, thinly sliced

Directions:

In  a Corning dish place the chicken, somewhat flattened, not too thick.
Pour 2 teaspoons of soy sauce  and 4 teaspoons of salad dressing over the chicken.
Cook  at 350 uncovered for 30 mins.
Remove from oven and  add ½ cup water and more soy and dressing if needed.
Cover and cook another 30 mins.
Cut onions and red peppers and cook in the same  mixture as above, but in a frying pan.
Saute, add a bit of water if needed to keep moist.
Pour the Soy, peppers and onions over the Sweet Soy Chicken and enjoy!
