After dinner of grilled cod, Gail and Mike Kumpf whip up a little puddin’ – the perfect dessert to accompany our perfectly grilled fish. Yum, yum, yum! And here is their recipe….
3/4 cup sugar, divided
1/3 cup flour
Dash of salt
Three eggs separated
2 cups of whole milk
1/2 teaspoon vanilla
45 vanilla wafers
5 bananas sliced
Heat oven 350°
Mix 1/2 cup sugar, flour and salt and top of double boiler. Blend in three egg yolks and milk. Cook uncovered over boiling water 10 to 12 minutes or until thick, stirring constantly. Remove from heat and stir in vanilla.
Pour small amount of custard in bottom of baking dish. Cover with layers 1/3 each of the vanilla wafers, bananas and remaining custard. Repeat layers two times.
Beat egg whites on high speed of mixer until soft peaks form. Gradually beat in remaining sugar until stiff peaks form. Spread over custard to the edge of dish.
Bake 15 to 20 minutes or until lightly browned. Cool slightly and add vanilla wafers around side before serving.
Best eaten that day. Refrigerate if not eaten.
