The earliest chowders -- before the American Revolution, at least, did not typically have potatoes, but for many of us, potatoes are now a key ingredient. Rhode Islanders (and many others) prefer brothy chowder, but I&#039;ve alwasy favored a little cream myself.  There is an art to getting the right balance and the right thickness, and like art, everyone has their own taste (and everyone&#039;s a critic!)</description>
