Judy Petercuskie’s Sweet Potato Pudding

Sweet potatoes for dessert?  Definitely, especially when it’s Judy Petercuskie’s recipe for Grated Sweet Potato Pudding.  This recipe was a favorite dessert that Judy and her sisters would beg her grandmother to make.  What a nice way to welcome fall.

For the past 15 years Judy and her husband John would come to the Cape every weekend and work on their 1950’s cottage in Centerville. Their dream of never having to cross the bridge on Sunday evenings or Monday mornings finally came true in January of this year when they moved to their home year round.  Having grown up in the real-estate business, Judy was delighted to begin working for Today Real estate.  She loves helping people find their perfect home! Here Judy shares her grandmother’s recipe for Sweet Potato Pudding.
Grated Sweet Potato Pudding
Serves 6
Ingredients
3 cups grated raw sweet potato
1/2 cup sugar
1/2 cup maple syrup
1 cup milk
1 teaspoon nutmeg
2 tablespoons butter (melted)
1/2 cup chopped nuts (Pecans , hazelnuts, walnuts )
1/2 teaspoon salt
2 eggs well beaten
Directions
Combine sweet potatoes, sugar, maple syrup, milk, nutmeg, butter, nuts and salt. Add eggs and pour into buttered shallow pan.
Bake in a moderately hot oven (375) 50-60 minutes.
