Executive Chef Greg Reeves has come a long way in his career since he graduated from the University of New Hampshire and Cambridge School of Culinary Arts. Wild Boar Bolognese
Serves 6 – 8
2 lbs. Wild Boar Shoulder*, cut in half inch cubes
1 lb. Boneless Pork Shoulder, cut in half inch cubes
2 ea. White onion, small diced
1 ea carrot, small diced
2 ea celery, small diced stalk
3 cups Red wine
8 cups Chicken stock
2 cups canned tomato
3 ea Sprigs Thyme
3 ea Sprigs Rosemary
Preheat oven to 325.
1.Season meat with salt and pepper, and sear until brown, and then transfer meat out of pot.
2. Add the diced vegetables and herbs to the pot and saute over medium heat until the vegetables are translucent.
3. Deglaze with red wine, and reduce to one cup.
4. Add the meat, tomato and chicken Stock.
5. Bring up to a boil, turn off heat, cover with lid and transfer to the preheated oven.
6. Cook in oven until meat is tender, about 3 hours.
7. Once tender, put back on stove on medium heat.
8. Keep stirring meat every few minutes to beak up the meat and reduce until the sauce thickens up, about 45 minutes.
9 Once meat sauce is at desired thickness, add any cooked pasta. Serves 6-8. Potato Gnocchi recommended.
*Wild boar can be found at BJ’s and Stop & Shop or online. It has 1/3 less fat, calories and colesterol than domestic pork and is not gamey or greasy. You can also substitute lamb or pork for the wild boar.
