Cod Baked with Prosciutto
6 ( 6-oz.) skinless cod fillets
2 tbsp. butter, minced
16 lg. thin slices prosciutto (about 8 oz.)
Lentils, prepared per pkg. Instructions / onions sliced optional
Brush cod fillets with butter. Wrap each filet with 2 slices of prosciutto, leaving ends of fillets unwrapped. Brush with butter again. Place on a baking sheet lined with foil. Bake at 400 degrees until fish is opaque at unwrapped ends, about 15 minutes. Carefully remove fish from pan and place on a bed of lentils.
