MiMi Poyant is a new grandmother and a hostess extraordinaire. Keeping up with her social life would tax even a twenty-something! And of course she needs lots of time to shop for her lovely new granddaughter. Her secret is keeping it simple and keeping it special. She often serves one of her mother’s recipes, a lobster stew that is rich but also very easy. Lobster meat is expensive but a bowl of this stew with some crusty bread and maybe a plain green salad is all you need to wow all those house guests. Here MiMi shares her mother’s recipe with us.
1 1/4 lb. lobster meat
4 ounces butter (or more)
1 cup heavy cream
1 cup clam juice
Salt & pepper to taste
2 tablespoons dry sherry
Pinch of paprika (optional)
Cut lobster meat into large bite-sized pieces.
Melt butter and add lobster, simmer for 5 minutes, until red color appears in butter.
Add cream and clam juice
Re-heat, but do NOT boil. Season with salt and pepper (and paprika if you like)
Let stand for several hours and reheat before serving (or eat it right away if you can’t wait).
