Lobster Claw’s Indian Pudding

Don Berig, Owner of the Lobster Claw in Orleans, has been welcoming thousands to his family-owned restaurant on Route 6A for 56 years.   The Lobster Claw menu represents classic, old-fashion Cape Cod cuisine that will leave you satisfied and happy.

Indian Pudding
(Serves 7-8)

3 eggs
1/2 cup of extra fine granulated sugar
1/2 tsp of cinnamon
3/4 tsp of ginger
1/4 cups of molasses
2 ounces of raisins
2 cups of milk
1 cup of fine corn meal
1 tsp grated orange peel

Mix all ingredients in a large pot. Add the cold milk last. Cook in a large double boiler for 1/2 hour until thickened. Stir every 5 minutes.
Allow the pudding to cool about an hour to be at its best. It should be reheated to warm temperature if it has been chilled.
Serve with whipped cream or vanilla ice cream.
