Mama’s Chocolate Pie


Southern girls love their Mamas and especially love their Mamas recipes.  Generations of women keep Southern cooking alive for this reason, even if they are cooking Southern on Cape Cod.  Every Mothers’ Day, Gail Kaley Kumpf remembers her Mama with Mama’s favorite Chocolate Pie.  Even Yankees love this recipe.

Mama’s Chocolate Pie

1 ready to use pie crust
1&1/2 cups sugar
6 T all-purpose flour
3 T unsweetened cocoa powder
1 1/2 cups whole milk
4 eggs separated
1 1/2 teaspoon vanilla
1/4 cup/stick butter
1/8 teaspoon cream of tartar


Pre-bake pie crust according to package directions.
Mix 1 1/2 cups of sugar, the flour and cocoa in medium-size saucepan. Stir in just enough milk to make a paste; stir in remaining milk. Cook over medium heat stirring 10 to 12 minutes or until thick.  Remove from heat.
Beat the yolks in a medium-size bowl until thick and yellow. Carefully whisk a little  cocoa mixture into yolks; whisk yolk mixture back into cocoa mixture. Bring to boiling. remove from heat. Stir in vanilla and butter just until butter is melted then pour into pie shell.
Beat egg whites until frothy. And cream of tartar and beat until peaks form. Beat in 6 tablespoons sugar, 2 tablespoons at a time until stiff peaks form. Spread the meringue over pie filling so it touches all around the edge.
Bake in a 350 oven for 12 to 15 minutes or until meringue is lightly brown. Transfer to a wire rack to cool completely.
