This summer B.A.R.S. (Barnstable Assn. for Recreational Shellfishing)
http://shellfishing.org/ has been offering classes for children, teaching them how to dig for clams. There are lots of delicious recipes for the kids bounty, but a clam pizza may just be their favorite. And, adding a little more fresh garlic, this pizza becomes the perfect appetizer or lunch for all the big guys. Once you try it, you may never go back to red sauce!
Grilled Clam Pizza Pie
1 Prepared Pizza Dough (we like Trader Joe’s for the size and texture).
3 dozen little neck clams
1 teaspoon dried oregano
1 Tablespoon chopped fresh basil
1/2 teaspoon freshly ground black pepper
2-5 cloves garlic, chopped fine
1/2 cup (or more) freshly grated Pecorino Romano cheese
1/4 cup extra-virgin olive oil
Place the clams in a large pot with about 1 cup of water on high heat. Steam the clams until they open. Discard any clams that do not open. Remove clams from the pot and cool. When cool enough to handle, remove the clams from their shell and drain the meat on paper towels.
Shape the pizza dough into a thin oblong shape (so that it will fit on a cookie sheet) and oil one side of the dough. Put oiled side down on a hot grill for 5 minutes, then oil the top side and flip the crust. Grill the second side for about 3 minutes. Put the grilled crust on a cookie sheet.
Add the clams to the pizza crust, leaving a small border (about 1″). Sprinkle with the oregano, basil, garlic, black pepper, and Pecorino Romano. Drizzle the olive oil over the top.
Grill until the crust is deep brown and the toppings are bubbling, about 5-10 minutes. Remove from the grill and let the pizza rest for a few minutes (if you can wait). Cut into individual portions and manga!
