Linda’s Garlic Angel Hair Pasta

We love Friends who come and visit Cape Cod often – and when they are great cooks and pitch right in, it’s even better.  Our dear friend, Linda Friend (yes, that’s really her name) is a fabulous cook!  When you are invited to one of the Friend’s parties, it’s the first thing you put on your schedule.

However, Linda hates to be in the kitchen while everyone is drinking wine and having fun.  So she gave us this recipe that you can make ahead of time and serve at room temperature.  Cut up some bread, pour the wine and relax and enjoy your guests.

A former flight attendant with US Air whose primary routes were Paris and Rome,  Linda is the go-to person when traveling to Europe and looking for great places to eat!  She was one of the first persons to open a gourmet take out shop, Just Friends (think Silver Palate and Barefoot Contessa) in North Andover, MA.  Her table settings are as beautiful as her food; there is always something special.

When Linda and her husband Stevie are not visiting Cape Cod, you will most likely find them in Hawaii!  Enjoy this terrific recipe!


Linda’s Garlic Angel Hair Pasta
(Serves 6-8)

1 head of garlic minced
1/4 cup olive oil
1 tsp. crushed red pepper
6 lbs. plum tomatoes peeled and chopped
2 cups fresh snipped basil
1/3 cup capers with juice
2 tbsp. balsamic vinegar
1 cup snipped sun dried tomatoes
1 lb. angel hair pasta

Saute garlic and red pepper in olive oil (do not brown).  Add rest of ingredients and simmer for 25 minutes. Do not boil.
Bring to room temperature.
Cook angel hair and toss with cooled sauce.
Serve at room temperature.
