Mussels are found throughout the world and are used by Chef’s in a variety of cuisines. Of course we love Barnstable mussels. We cook them with recipes from all over the world. Here is a great recipe for mussels by Thai Chefs for Red Curried Mussels. As you prepare and enjoy these delicious mussels you may feel like your dining at the Mandarin Oriental in Bangkok.
Thai Red Curried Mussels
1/2 tsp. vegetable oil
1 Tbsp.Thai red curry paste
1 Tbsp. fresh ginger, finely chopped
1 can unsweetened coconut milk
2 tsp. sugar
1 1/2 Tbsp. fresh lime juice
2 lbs. mussels, cleaned and debearded
1 bunch scallions, chopped
2 Tbls. parsley
Optional: steamed rice, or crusty bread
Using a large saucepan, sauté curry paste and ginger in oil for 2 minutes over high heat, being careful not to burn. Add coconut milk, sugar and lime juice and bring to a boil. Add mussels and cover. Cook for 4 minutes or until shells open. Place mussels in warm serving dish, pour sauce over, and garnish with scallions and parsley.
